Don't think you will see much of a difference

* Device #2: GeForce GTX 1080 Ti, 2816/11264 MB allocatable, 28MCU << Only 2.8 is allocatable out of 11.2 any way on a 1080Ti

So unless the memory is somehow configured that it has high speed on the 6GB then there should negligible difference.
