itunes_backup2hashcat.pl is the script you need to use to extract the hash from the manifest.plist you have.
May I ask what graphics card you are using and exactly when you need this done by? Chances are that if the password isn't a simple dictionary word, you are going to have hard time especially if you haven't done this before.
