You're on the right track. Although: How much room you leave for future system upgrades is up to you. There are anyway more important questions: How often and/or how long should this rig run with Hashcat oder mining? The more you will use it, the better the quality of MB and PSU have to be.

But it's of course easy and unexpensive to build a system with one spare slot. Get a decent Mobo with good quality and forget all the fancy stuff (expensive chipset, sound chip etc.) since you won't need it anyway.

You got it right to get the best GPU you can buy since that's the essential part.

CPU is almost irrelevant, one socket fine and something like a i8100 more than enough. If you plan with 16GB RAM you'll be ok for most config featuring 1 or 2 GPUs.

Forget HDD. A 250GB SSD can house everything you need including two differnt O/S and a bunch a wordlists. I use three partitions, one for Windows, one for Linux and one for hashcat. Serves fine and is easy to handle.

The PSU should be gold standard or up. If you plan with two 1080Ti you should have 850-1000W. Two normal 1080 are served with 600-700W very well.
